Sourdough Discard Flat Bread?

Anyone have some good sourdough discard flat bead recipes they could recommend?

I've never heard of that, could you tell what it is?

Sourdough starter will outgrow its container. Some should be removed periodically, and this is called "discard." The word is a misnomer, as the bread dough is rarely discarded. Recipes for discard flatbread are numerous; here is one:

I found something VERY cool for home bakers, this would pertain to baking sourdough bread as well, we all have to "proof" the yeast by rising the dough, this is a folding proofer that can rise dough, make yogurt, slow cook things, it appears to be pretty versatile:
